Winemaker’s Comments
"The Estate Cabernet is crushed into our concrete open fermenters and chilled to 14 degrees before inoculation. Heading down boards are utilised after 2 days to keep the cap submerged and allow better control of the fermentation rate, whilst a constant pump over is used to introduce oxygen. The wine is then pressed to French and American oak barrels for malolactic fermentation and racked 3 times over the next 2 years before final blending for bottling. The 2007 shows the classic Barossa Cabernet characteristics of cassis, black olives & licorice" - Richard Langford
